Potatoes curry ( Aloo Hin ) is one of our staple curries in Burmese dining tables culturally. Geographically, we are neighbors with India, Bangladesh in North West of Burma. We share a lot of food and cultural traditions. When we say curry, most people think that it is either Indian food or some Asian food. However, the curry was historically introduced by the British, who colonized both India and Burma.  The slight difference between Burmese and Indians cook curry is that Indians use more spices, and Burmese use fresh ingredients like onion, garlic, and ginger.

 

Usually, vegetarian and vegan versions of Burmese Aloo Hin, Potatoes Curry is cooked with potatoes alone. I added Portobello Mushroom to add more nutrition, enhancing the earthy sense from the combination of potatoes and mushrooms.

Pair this curry with steamed coconut rice.

Ingredients

Adjust Servings
3-4 pieces of big Potatoes
250 gram of Portobello Mushroom
3 table spoon of Groundnut oil or any cooking oil
1 big Onion
1 teaspoon of Tumeric powder
1/4 teaspoon of Burmese Curry Mix
A bit of crushed Black Pepper
A bit of dried Rosmary
A bit of chopped Spring Onion
Optional
A bit of Chillies Powder ( Only if you want your curry to be spicy version )

Directions

1.
Heat the oil in pot.
Mark as complete
2.
Add chopped Onion and Tumeric to stir-fry and let the Onion caramelized.
Mark as complete
3.
When Onion is well cooked and soft, add cubed Potatoes and stir-fry for 5 mins.
Mark as complete
4.
Add one cup of Water in pot, cover the lid and continue to cook.
Mark as complete
5.
After 10 minutes, remove the lid and add sliced Mushroom.
Mark as complete
6.
Add salt, black pepper and Burmese Curry Mix sprinkled, cover the lid for 10 more minutes.
Mark as complete
7.
Cook until both Potatoes and Mushroom are well-cooked.
Mark as complete

      Hi Jyothi,

      I will work on that. I am not sure of curry paste as I never cooked with curry paste but I can give easy recipe of basic Burmese curry cooking way. Thank you for ideas.
